Khaled Shifa is a third generation farmer working the same Choche forest his family first picked from. Nothing is cleared to make room for it. The shade, the old soil and the biodiversity around it give the coffee a character you cannot plant your way to.

Pulped natural processing keeps the fruit sweetness while holding the clean, tea-like heirloom character underneath. Crisp apple and sweet grape first, then honey cake, closing on black tea.
